A simple fried meat recipe that can be used with any vegetable or lentil to boost the taste.


Ingredients
500g boned lamb
2 medium onions, skinned, and chopped
2 tbsp freshly ground garlicClick to find more about garlic
1/2 tsp. chili powder
to taste saltClick to find more about salt
1 1/2 tsp. ground coriander
1 tsp. ground cumin
1/2 level tsp. ground turmericClick to find more about turmeric
2-3 tomatoes, chopped
1" piece gingerClick to find more about ginger, peeled and ground


Preparation
Cut meat into 1/2 inch pieces.
Put onions, garlicClick to find more about garlic, saltClick to find more about salt, chili powder, ground coriander, turmericClick to find more about turmeric and meat in a heavy based pot. cook for 15 to 20 minutes, or until the meat is half cooked.
Add tomatoes, and gingerClick to find more about ginger in meat and cook for 5 minutes, stir all the time to mash tomatoes.
Add oil and cook for 5 to 10 minutes, keep stirring all the time. You may have to add one or two Table spoons of water to prevent gravy sticking to the bottom of the pot.
When the gravy begins to release the oil, the meat reaches the bhuna stage. Now it is almost tender and a little cooking is required to finish the dish.

Note:
Meat cooking time depends on the quality of meat.
Bhuna is an excellent method for cooking "vegetables with meat" or "lentilClick to find more about lentil with meat".
When the meat reaches bhuna stage, the vegetable or lentilClick to find more about lentil can be added to meat mixture(bhuna gosht). Plain water is usually added to make gravy.
The cooking time depends upon the vegetable or lentilClick to find more about lentil.Some vegetables are soft ,like okraClick to find more about okra and zucchiniClick to find more about zucchini, and cook quickly.These kind of vegetables can be added directly to meat mixture (bhuna gosht) and cook them for 10 minutes.
Some vegetables and lentils take time to be cooked. In such case take out the meat pieces from the gravy. Add vegetable or lentilClick to find more about lentil, when it is almost cooked add meat pieces, and cook for few minutes.

I like the method of cooking..Appropriate ingredients.I add a little bit of whole coriander & whole garam masala to give it a special bhuna meet taste.I also make it a point to add aal the ingredients including tomatos when i start cooking& i only stir it when it's ready for bhunai..proper bhunai is the main secret of yummy bhuna gosht...Loved the recipe & method of cooking this delicious dish...

This receipe has been around in my family since my grandmas time which was 1915.. so this is good to see others used it too... but just double check things like 23 tomatoes and 12 chilli, which infact should be two to three tomatoes and two to three chillies. alot of people may not have previous cooking knowledge and take your receipe word for word. some people add oil in after meat and some prefer to add in before they put in meat. I personally think it tastes better if add oil in after the meat like This receipe states. Thanks for putting this up....

hahahahahaha i laughed so much when I read these comments. How goofy can some people get?? This is very similar to my mamas recipe and its actually really good. Although I would add oil before adding the meat. Cook over low heat for around 40 mins to get really tender meat. and more chilli :)

if we all apply some common sense which is nt actually common in many :p this number of tomatoes mite be 2-3 whoever wrote this recipie mite have forgotten or missed the dash between 2 and 3 ....so think abt it happy cooking
