This dish is made in several ways but the two popular versions are Kashmiri and Iranian. The authenticity of this dish is because of the gravy that is made with milk or coconut milk and all the flavorful spices.

Ingredients
1/2 kg. mutton
2-3 medium sized tomatoes
4 onions, finely chopped
1 tsp each gingerClick to find more about ginger and garlicClick to find more about garlic pastes
1 tsp green chilliClick to find more about green chilli paste
1/2 tsp garam masala powder
1/4 tsp turmericClick to find more about turmeric powder
1 tsp cumin powder
4 tsps coriander/cumin powder
1/2 tsp black pepperClick to find more about black pepper powder
1/2 coconut
11/2 cups milk
11/4 cup gram dalClick to find more about dal, soaked for 1 hour
1/4 cup oil
1 tbsp gheeClick to find more about ghee
3-4 slit green chillies
SaltClick to find more about Salt to taste


Preparation
Wash and strain the mutton. Heat oil, add onions and fry till transparent.
Add tomatoes, gingerClick to find more about ginger/garlicClick to find more about garlic and green chilliClick to find more about green chilli pastes, turmericClick to find more about turmeric, saltClick to find more about salt and mutton. Fry well and pressure cook (1 whistle, and simmer 15 minutes).
Open cooker and add cumin powder, garam masala powder, pepper, coriander leavesClick to find more about coriander leaves and gram dalClick to find more about dal and fry well.
Finally, add coconut milk and pressure cook (1 whistle, and simmer 10 minutes).
Garnish with slit green chillies and serve hot.
