To those who are confused: You make the 'batter' in the same bowl you cut the chicken into. Hence, the chicken is already covered with batter, so you only need to take it out and coat it in the plain flour.

In my opinion the original recipe will be like as below: First cut chicken into small bite size pieces. Add salt, pepper and self rising flour. And add about 2 tablespoons of water. Mix well ( to make a thick batter, if the batter is not thick it will not stick to chicken well again remember that it should not be as thick as like kneed flour) In a separate bowl add plain flour, salt, & pepper. (to make chicken more spicy you can add red pepper and garam masala to taste!) remember this time don't add water. this will be in powder form. Now take chicken dip in the batter and then coat in the plain flour mixture, one piece at a time. Deep fry till golden.(about 5 mins) Enjoy with ketchup chutney or hot sauce. It's delicious...........

To those of you who were confused by the method, I think the chicken has a batter coating, with the self rising flour, and then it is coated with the plain flour... So technically you are only dipping it once. The self rising flour coating helps the plain flour coating to stick.
