Lamb leg marinated in flavored spices and then baked with the blend of sauce.

3 kg boneless leg of lamb
7-8 garlic cloves, minced
1/4 tsp minced ginger
2 tbsp minced onion
1/2 tsp oregano
1/2 tsp pepper
Salt as per taste
2 tbsp cumin seeds powder
2 tbsp coriander seeds powder
1/2 tsp red chilli powder
1/4 tsp turmeric powder
1/2 tsp garam masala
1/2 cup olive oil
1 tbsp vinegar
1 tbsp lemon juice
Cut cris-cross into the leg of lamb, Mix all the ingredients, Marinate the meat with the above mixture, Refrigerate for 10 hours, Preheat the oven at 450 o F
Place the meat in the oven, Reduce the oven to 325 oF, Let the lamb bake for 2-1/2 -3 hours till it is tender, basting often with the sauce in baking dish
