Chicken Dopiaza... "do" means "two" and "piaza" refers to onions - So the onions used in this recipe is a bit more in quantity then a usual gravy based dish. Chicken cooked in onion's gravy, has prominent flavors of onion with other spices.


Ingredients
Medium Size ChickenClick to find more about Chicken 1.
Red Chillies 2 tbsp.
Onions 2.
GingerClick to find more about Ginger 2 pieces.
GarlicClick to find more about Garlic cloves 8.
Mustard oil/CornClick to find more about Corn oil 1 cup.
Yogurt 4 tbsp.
SaltClick to find more about Salt to taste.
TurmericClick to find more about Turmeric powder 1 tsp.
Coriander LeavesClick to find more about Coriander Leaves.
Cumin SeedsClick to find more about Cumin Seeds(to sprinkle).
Black PepperClick to find more about Black Pepper(to sprinkle).


Preparation
Grind all the spices. Cut the chickenClick to find more about chicken in pieces. Heat oil in a pan & put all the spices along with onions, gingerClick to find more about ginger/garlicClick to find more about garlic with saltClick to find more about salt & keep on stirring adding little water to keep color red. Then add chickenClick to find more about chicken & yogurt, add a little water & cover on a slow fire. Keep on stirring every now & then. When the chickenClick to find more about chicken is tender & water evaporates, sprinkle coriander leavesClick to find more about coriander leaves, black pepperClick to find more about black pepper & cumin seedsClick to find more about cumin seeds.
The same recipe is suitable for mutton.

Dear Sghaznavi, this dish requires just a little gravy to cover the meat and not too watery.
