Delicious Okra(bhindi) cooked in spices.....


Ingredients
250 gms OkraClick to find more about Okra or Lady Fingers
1 tsp TurmericClick to find more about Turmeric
1/4 cup Oil
1 tsp Red Chilly powder
1/2 tsp Mustard seeds
1 tsp Coriander powder
2 Onions sliced
4-6 small Green Chillies
1 medium PotatoClick to find more about Potato peeled and cubed
2 Tomatoes chopped
1 tsp SaltClick to find more about Salt
Coriander leavesClick to find more about Coriander leaves chopped


Preparation
Wipe the OkraClick to find more about Okra with a damp cloth.
Top and tail them.
Cut each OkraClick to find more about Okra into half, cut each half into 2 lengthwise and set aside. Heat the oil in a pan, fry the mustard seeds till they "pop".
Add the Onions and fry for 2 3 minutes. Reduce the heat, add the okraClick to find more about okra, potatoes, saltClick to find more about salt, turmericClick to find more about turmeric powder, red chilly powder, coriander powder and green chillies. Toss the contents of the pan well.
Cover the pot and cook for 10 15 minutes, tossing the vegetables every few minutes. Stir in the Tomatoes.
Mix well and cook for a further 10-15 minutes.
