Boneless chunks of mutton cooked in garam masala, yoghurt, ginger, garlic and chillies with saffron flavored rice on dum.


Ingredients
1/4 cup oil or gheeClick to find more about ghee
1 tbsp juliennes of GingerClick to find more about Ginger
1/2 cup Onions sliced
Coriander leavesClick to find more about Coriander leaves chopped
1 & 1/2 tsp Red Chilly powder
MintClick to find more about Mint leaves chopped
1/4 tsp TurmericClick to find more about Turmeric powder
2 Green Chillies chopped
1 tsp SaltClick to find more about Salt
5 Cloves
1 & 1/2 tsp GingerClick to find more about Ginger / GarlicClick to find more about Garlic
1 CinnamonClick to find more about Cinnamon stick 2"
6 tbsp Yogurt whipped
12 Peppercorns
1 TomatoClick to find more about Tomato chopped
1/4 tsp Yellow food colouring diluted in 1/2 cup water
500 gms Beef undercut cubed
1 tbsp of Water
Rice boiled with saffron 1/2 kg


Preparation
Heat the oil.
Fry the onions till they are translucent.
Add the red chili powder turmericClick to find more about turmeric powder, saltClick to find more about salt, and gingerClick to find more about ginger / garlicClick to find more about garlic.
Stir and fry till the oil seperates.
Add the yogurt, tomatoes, beef and water.
Cook for 15 minutes or until the beef is tender. Remove the pot from the heat.
Put in the juliennes of gingerClick to find more about ginger, coriander leavesClick to find more about coriander leaves, mintClick to find more about mint leaves, green chillies, cloves, cinnamonClick to find more about cinnamon, peppercorns and yellow food colouring.
Add the rice on top along with the additional oil.
Cover the pot and return to heat.
Simmer over a low heat for 10-15 minutes.
