For the wrappers:
===========
1 1/2 cups plain flour (maida)
1/2 teaspoon salt
For the filling:
=========
1 teaspoon chopped garlic
1 teaspoon chopped coriander
1/2 teaspoon whole black peppercorns
1 1/2 cups mashed potatoes
2 tablespoons carrots, grated
2 tablespoons roasted peanuts, ground
1 tablespoon soya sauce
1/2 teaspon sugar
1/2 teaspoon salt
Other ingredients :
============
1 tablespoon cornflour, mixed with water to make a paste
oil for deep frying
For the wrappers :
=============
1. Mix the flour and salt together.
2. Add the hot water gradually and make a soft dough.
3. Knead for a while and keep aside for 30 minutes.
4. Apply oil on your palm and knead the dough until it becomes smooth and elastic.
5. Roll out thinly on a floured surface, using a rolling pin and cut into 25 to 30 squares of 75 mm. (3").
For the filling:
========
1. Pound the garlic, coriander and peppercorn in mixxie to form a paste.
2. In a bowl, mix the paste with the mashed potatoes, carrots, peanuts, soya sauce, sugar and salt. Mix throughly.
3. Place a spring roll sheet on a dry surface.
4. Fold the gold bags as to form a bag or pouch OR illustrasted in the diagram.
5. Deep fry in hot oil till golden brown.
4. Drain & tie with a blade of lemon grass.(if lemon grass is not available you can use cilantro sticks or dont use anything to wrap its just for decoration)
5. Serve hot with a hot sauce..or any sauce of your choice
Tips:
====
Roll the wrapper dough as thin as you can. The gold bags will look and taste better.
