Ingredients
Rice 500 gms
Yogurt 500 gms
Onions 3 large
TomatoClick to find more about Tomato 2 small
Oil 5 tsp
SaltClick to find more about Salt, redpepper according taste
TurmericClick to find more about Turmeric 1/4 tsp
Ground corriander 1 tsp
Garam masala 2 tsp
MintClick to find more about Mint leaves 4 to 5
ZeeraClick to find more about Zeera 1/2 tsp
Green chillies 2
Food color(liquid)2 tsp
Lemon liquid 3tsp
GarlicClick to find more about Garlic 4 tsp minced
GingerClick to find more about Ginger 3 tsp minced
Mutton 500 grm


Preparation
Take yogurt and mix saltClick to find more about salt, red pepper, and garam masala garlicClick to find more about garlic, gingerClick to find more about ginger, turmericClick to find more about turmeric, coriander in it.
Then add mutton in it and marinate it for 5 to 6 hours.
Afer that heat oil in a pot and add onoins in it when they are brown add tomatoes and marinated mutton in it.
And cook on a slow heat until the mutton is tender and masala leaves oil and the water is dried.
You need to make it little bit spicier than your regular taste.
When you are done with this soak rice in water and boil water in a large pan.
You need to put saltClick to find more about salt, zeeraClick to find more about zeera, sabit garam masala in it.
When water is boiled put rice in them don't let water dry.
When rice is semi cooked drain water and take out the rice in that pan make one layer of half th rice and put mutton masala and then make another layer of rice on top of that layer sprinkle mintClick to find more about mint leaves, brown onionClick to find more about onion and green chillies and food color.
Cover it tightly and cook on a low heat for 30 to 35 minutes.
Serve with raita and salad and enjoy your day.

After the water was dry I put the mutton in a cooker and gave it pressure for two whistles, just to cook the muuton a bit more. The biryani was very good.

For Garam Masala mix you will need: 1 tablespoon cumin 1 1/2 teaspoons coriander 1 1/2 teaspoons cardamom 1 1/2 teaspoons black pepper 1 teaspoon cinnamon 1/2 teaspoon cloves 1/2 teaspoon nutmeg Toast all the above ingredients for 2-3 min or until they start to crackle. Let it cool of a little and then grind them in a fine powder. You can always use the ground form of all the above ingredients and mix them well. Hope it helps.

taste is good. it took time to dryup the gravy. i cooked the rice before that. so when layered the rice didnt cook prorperly.

Good. But since I pressure cooked the mutton, it became watery and it took more time for me to dry it. other than that the tate was very good.

Adding mace, nutmeg, 5 spice (kabab chini) with the garam masala will enhance the flavour of the Biryani meat as well as the Biryani as a whole.
