Not to sweet and healthy, light bodied muffins.
1 1/2 cups flour
3/4 cup sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp salt
1 orange
1/3 cups orange juice
6 tbsp. butter
1 egg
1/2 cup raisins
Pre heat oven to 400 d. grease muffin cups.
Combine first five ingredients.
Grate rind from orange.
Disgard pith, chop and seed orange.
In a blender mix rind, orange, orange juice, butter and egg.
Add raisins. Put into muffin moulds and bake 15 to 20 mins.
