Baingan filled with tangy and roasted spices fried and then grilled with a coat of cheese on top.


Ingredients
500g baingan(long).
2tbsp coriander seedsClick to find more about coriander seeds.
1 tbsp cumin seedsClick to find more about cumin seeds.
1 1/2 tsp turmericClick to find more about turmeric.
4 red chillies.
1 tsp kasoori methiClick to find more about methiClick to find more about kasoori <a href=methiClick to find more about methi" align="middle" border="0" hspace="2" />.
2 tsp amchoorClick to find more about amchoor or to taste.
SaltClick to find more about Salt to taste.
1/2 cup grated cheese.


Preparation
Wash the baingan well. Dry them and make 4 slits on each.
Dry roast coriander, cumin seedsClick to find more about cumin seeds and red chillies.
Grind them together into a powder along with the kasoori methiClick to find more about methiClick to find more about kasoori <a href=methiClick to find more about methi" align="middle" border="0" hspace="2" />, add amchoorClick to find more about amchoor, turmericClick to find more about turmeric and saltClick to find more about salt to the powder.
Mix the dry spices well and fill each baingan with this masala.
Heat oil in a karahi, add the baingans, cover and cook till done.
Keep turning the baingan once in a while. When cooked, arrange the baingan in a baking tray.
Sprinkle the grated cheese all over it and grill in preheated oven (with door open) until cheese melts.
Check seasoning. Serve hot with roti or paratha.
