to you sir/madam, it will be nice if you give us the poportions for the biryani garam masala. thank you by Anonymous IF THE ABOVE RECIPE IS FOLLOWED U WILL GET FRIED CHICKEN WITH RICE AND RAITA...AND NOT BIRYANI! pls stop fooling people with half learnt recipes and secondly if someone follows the method step by step as above, they will get nothing but fried chicken with rice and not biryani! 1.for example..there is no mention of the curd and masala mixture to be mixed or added anywhere. 2. when u say garam masala... what are the ingredients in garam masala. if you are talking about the ones available in the market then they are bullshit. u will never get that distinctive biryani taste! and for your information you will need atleast 10 different spices to make biryani garam masala. and their proportion varies. these are the spices used. Cardamom,Black Cardamom, Fennel,Jeera, Shah Jeera, Dagad ke phool, Mace, Nutmeg, Cinnamon, Cloves, Pepper, Star Anise & Bayleaf.

Recipe does not include some biryani masala (specially used for kachi biryani), Nutmeg, Mace, 5 Spice (kabab chini). Garlic and Ginger is also not included. Cooking time of 20 minutes on dum is not enough, it needs more time and mutton will need at least 45 minutes or more on dum. Oil should be mixed with the meat and ghee should be used over the rice.

How to soften the chicken? & yes, the meat is kept raw. It cooks with the rice. The raw papaya in the marinade does that. I use the same ings & method with goat meat instead of chicken...works just fine, only I don't layer it. I just put all the rice on the meat & pour some ghee & saffron on top & cook it in a slow oven for about 75-90 minutes. And also, I use attaa paste to seal the degchi to retain flavors & moisture. This is also a good one.

It's good to criticize, but please don't write comments that don't help other users. At least the person who has posted the recipe has made an effort to put it here. Can you say the same for yourself?
