Boneless Chunks of Chicken cooked with ginger/garlic and tomatoes garnished with green peas.


Ingredients
1 kg ChickenClick to find more about Chicken(boneless, skinless thighs)
2 tbsps. VinegarClick to find more about Vinegar
2 tbsps. Soy Sauce
6 tbsps. CornClick to find more about Corn Flour
1 no. Egg
1 tsp. Black PepperClick to find more about Black Pepper
+ tsp. Mustard seeds (yellow)(powdered)
SaltClick to find more about Salt to taste
6 leaves Curry Leaf
1 tbsp. GarlicClick to find more about Garlic
1 tsp. GingerClick to find more about Ginger
2 tsps. Red Chilies(paste)
500 gms. TomatoClick to find more about Tomato(diced)
400 gms. TomatoClick to find more about Tomato Sauce
2 tbsps. GingerClick to find more about Ginger(finely chopped)
4 tbsps. Vegetable Oil
250 gms. Peas


For Garnishing :
34 nos Curry leavesClick to find more about Curry leaves (intact with stalk)
2 nos Green Chillies (cut lengthwise)
1 Lemon (cut into wedges)
GingerClick to find more about Ginger, julienned
Coriander leavesClick to find more about Coriander leaves (chopped)


Preparation
Wash, clean and cut the chickenClick to find more about chicken into medium size pieces. Mix it with the vinegarClick to find more about vinegar, soy sauce, cornClick to find more about corn flour, egg, black pepperClick to find more about black pepper, saltClick to find more about salt and mustard powder. Marinate for two hours.
Deep fry the marinated chickenClick to find more about chicken pieces taking care not to stick each other and keep aside.
In a sauce pan heat oil, add curry leavesClick to find more about curry leaves and gingerClick to find more about ginger/garlicClick to find more about garlic paste and fry till light brown.
Now add red chilli paste and tomatoes, when cooked add the tomatoClick to find more about tomato sauce, chopped gingerClick to find more about ginger and fried chickenClick to find more about chicken pieces.
Mix well, cover the pan and cook for 15 minutes on very low flame.
Meanwhile, heat 1 tsp oil in a frying pan and lightly fry the green peasClick to find more about green peas, sprinkle a pinch of saltClick to find more about salt and keep aside.
Now dish out the chickenClick to find more about chicken in a shallow bowl. place the green peasClick to find more about green peas all around the chickenClick to find more about chicken (should not be over the chickenClick to find more about chicken).
Garnish with curry leavesClick to find more about curry leaves at one corner, green chillies at another and lemon wedges at third corner.
Sprinkle julienned gingerClick to find more about ginger followed by chopped coriander leavesClick to find more about coriander leaves over the centre part of the chickenClick to find more about chicken.
Serve hot.
