Tahari recipe. Tahari is another name of quick veggie rice and is normally served with curd and tomato chutney.

2 cups rice
2 small potatoes (peeled and cut in 4 pieces each)
1 med. onionClick to find more about onion (sliced)
2 tspn. saltClick to find more about salt
1 tbsn. garlicClick to find more about garlic & gingerClick to find more about ginger paste
2 tomatos (diced)
1 tspn. chilli powder
2 tspn. haldiClick to find more about haldi(turmericClick to find more about turmeric)
1 tspn. methiClick to find more about methi daana (fenugreekClick to find more about fenugreek seeds)

Wash rice, soak in water and set aside.
In pan, heat oil, fry sliced onions until golden brown add meti dana.
On med. heat add in gingerClick to find more about ginger/garlicClick to find more about garlic paste, chili powder, haldiClick to find more about haldi.
Mix for few seconds then add diced tomatoes and potatoes.
You may need to add little bit of water to keep it from sticking to bottom.
Mix around and keep it covered until potatoes are half cooked, stirring frequently.
Tomatoes should start to become a paste.
When potatoes start to get soft, add in rice, mix and add 34 cups of water and let it cook on med.low.
It is done when rice has cooked and water is gone.
Serve and eat hot with Raita.
