Simple yet tasty preparation of cauliflower and potatoes popularly eaten in North India

Preparation Time :10-15 minutes
Cooking Time :15-20 minutes
Servings :4

Ingredients
Potatoes 3 medium
Cauliflower 1/2 small
Oil 1 1/2 tablespoons
Cumin seeds 1 teaspoon
Ginger, cut into thin strips 2 inch piece
Green chillies, slit 3
Salt to taste
Turmeric powder 1/2 teaspoon
Coriander powder 2 teaspoons
Red chilli powder 1/2 teaspoon
Garam masala powder 1/2 teaspoon
Fresh coriander leaves, chopped 2 tablespoons


Method

Peel the potatoes, halve and slice. You can also cut them into small pieces. Wash the cauliflower, remove stems and separate into florets. Trim the stem and cut into small pieces. Heat one to one and a half tablespoons of oil in a kadai. Add cumin seeds, ginger, green chillies and sauté. Add potato pieces, cauliflower pieces and salt. Mix and add turmeric powder and mix well. Cover and cook on low heat. The vegetables should cook in their own steam. Keep stirring from time to time. After about ten minutes, remove the cover and add coriander powder, red chilli powder and garam masala powder. Mix and cover again. Cook till the vegetables are totally tender. Serve hot garnished with fresh coriander leaves

Aloo gobi is a vegetarian Indian recipe consisting of spiced potatoes and cauliflower. Although it's been around for years, aloo gobi recently achieved world-wide fame through the popular British football (soccer, if you're American!) film "Bend it Like Beckham". This vegetarian aloo gobi recipe won't disappoint. Vegetarian Indian food is all about the use of a combination of spices for amazing flavors, so make sure you've got the necessary spices on hand before you begin making this aloo gobi recipe.

Ingredients:

* 3 potatoes, chopped
* water for boiling
* 1 cauliflower, chopped
* 1/2 onion, sliced
* 1 tsp coriander
* 1 tsp cumin
* 1/2 tsp turmeric
* 1/4 tsp ground cloves
* 1/4 tsp ginger
* 2 bay leaves
* 3 tbsp olive oil
* 1 tbsp lemon juice
* 1/3 cup water

Preparation:
Boil the potatoes in water for about 15 minutes, or until just barely tender. Remove from heat and drain.

Heat the olive oil in a large skillet. Add the spices and cook for about 30 seconds, then add the onion, cauliflower and potatoes.

Allow the veggies to cook for 3 to 5 more minutes, then add the lemon juice and water.

Cover and cook for another 6 to 8 minutes, or until cauliflower is done cooking.

Serve your vegetarian aloo gobi alone or with rice if desired
