A great nutritious vegetable snack. It goes well with Tomato Ketchup.

Ingredients
500 g potatoes
50 g cabbageClick to find more about cabbage,roughly chopped
50 g carrots,finely chopped
50 g capsicum,finely chopped
3 green chillies,finely chopped
1 tsp black pepperClick to find more about black pepper
SaltClick to find more about Salt as required
1-2 eggs
Dry breadcrumbs as required
Oil for frying


Preparation
Boil, peel and mash the potatoes.
Add saltClick to find more about salt and pepper along with all the vegetables. Mix well with hand.
Make patties, dip in beaten eggs and breadcrumbs.
Heat oil in a pan, fry patties till both sides are brown and crisp.
Drain on kitchen paper.
Serve hot with ketchup

i want to suggest a variation in the above recipe just make tow small patties of the above mentioned ingredients and add mayonnaise on one patties and cover with other and close it at the edges and then dip that in egg and breadcrumb and fry that tastes really good.
